This is a group of 13 friends and neighbors that get together once a month to enjoy good food and share recipes. Each month a different girl hosts and does all the cooking. Every few months we have a "couples night" which means we get to bring our husbands and two girls work together to host the increased crowd. By the years end, each of us has only had to cook one great meal and in exchange you get to enjoy 9 others!

Couples Soup Night (Michelle Thurber, Lindsay Stevens)

Apple Walnut Salad



Corn Chowder with Chilies
I added one potato thinly sliced.  I used frozen corn and liked the sweet variety best.


White Chicken Lasagna Soup
This soup is very heavy as written.  I omitted the corn starch and exchanged the whipping cream for half and half.  I also added 2 tablespoons of Better Than Bullion instead of the bullion cube in the recipe.


After Chicago I couldn't stop thinking about the pistachio churro and what made it better than the other pistachio desserts we had there.  Wilson has discontinued their pistachio extract and other brands didn't have very good reviews and wouldn't get to my home in time test.  I tried Flavor Delights Pistachio flavoring and I think it did a pretty good job. Here are the Amazon links for the pistachio flavoring and pistachio butter.  Next time you find yourself at an Italian market or Italy itself, look for pistachio cream.  It looks amazing!


Pistachio Drop Cookies
I replaced the almond extract with 2 tsp Flavor Delights Pistachio in the cookie and added 1 Tablespoon to the icing.

Chocolate Pistachio Cream Thumbprint Cookies
I exchanged the pistachio extract with 2tsp of Flavor Delights Pistachio flavoring in the cookie and 1-2 T in the pistachio cream.

I used the option for individual bundt cakes and bout the little bundt pans on Amazon.

For the pesto grilled cheese appetizer, I just used store bought sourdough (or you could use any loaf you like), and spread pesto on one slice of bread, then added white cheddar cheese.  Cook them like you would a regular grilled cheese sandwich!

Amy's Fruit & Veggie night

 Appetizers

Bread cheese (fried in a pan) with raspberry rhubarb jam for dip.  I was able to find this cheese at the Smith's on 200 N in Kaysville



Monster Shakes

First add 2-3 cups of water to the blender along with a 1.5oz can of Coco Lopez Cream of Coconut.  Toss in whatever fruit & veggies you would like (I did Banana, strawberries, spinach).  Put Ice Cubes (about 2 1/2 cups) on top and blend all together.


Main Course- Naan Pizza and Mediterranean Tacos


Peach Pizza: 

Ingredients: Peach, Prosciutto, fresh mozzarella cheese, ricotta or goat cheese, Monterey Jack or asiago cheese, 4 large naan flatbreads, olive oil, garlic, fresh basil, balsamic reduction


Preheat oven to 450 and place baking sheet on top rack to heat up.  Prepare your Naan on tinfoil by Brushing Naan with olive oil and minced garlic.  Season with salt and pepper, then lay prosciutto onto naan.  Dollop ricotta or goat cheese onto pizza, then add the mozzarella, Asiago or Monterey Jack, and sliced peaches.  Place tinfoil with Naan on baking sheet in the oven and Bake for 6min.  Before serving, sprinkle pizza with fresh basil and balsamic reduction.  

To make Balsamic reduction: Pour 1c balsamic vinegar and 1/4c honey into a large, deep skillet..  Allow the mixture to simmer for around 15 minutes, or until the vinegar has reduced. Once cooled, it will thicken quite a bit.


BBQ Pineapple Pizza

Ingredients: Red onion, pineapple, balsamic vinegar, poblano pepper, fresh mozzarella, Monterey Jack cheese, 4 large naan flatbreads, bbq sauce, Portuguese sausage (I buy the Silva Linguica brand at smiths)


Preheat oven to 450 and place baking sheet on top rack to heat up.  Prepare your Naan on tinfoil by spreading it evenly with BBQ sauce.  Heat a drizzle of oil in a large pan over medium heat and add 1/2 a red onion sliced thin. Cook until softened (about 6-8min).  

While the onion cooks, very thinly slice a poblano pepper into strips, toss in a bowl with a drizzle of olive oil, salt, and pepper.  Dice mozzarella, pineapple (about 1/2c), and Portuguse Sausage into 1/2-inch pieces (I use 1 long link).

Once cooked onion is softened, increase heat to medium high and add the pineapple tidbits and chopped Portuguese sausage.  Cook, stirring until pineapple is lightly browned (2-3min).  Stir in 5 tsp of Balsamic or Red wine vinegar, stir for 1-2 min more on the heat until it all thickens a bit.  Turn off heat and season with salt and pepper.

Top bbq covered naan with the onion & pineapple mix, then diced mozzarella and some Monterey Jack cheese, then poblano strips.  Place tinfoil with Naan on baking sheet in the oven and bake for 6min.



Med Tacos

  • 1 ounce sun-dried tomato strips (not in oil)
  • 2 to 4 boneless skinless chicken thighs (about 10 ounces total)
  • 3 ounces organic shredded kale or other leafy greens
  • Mediterranean vinaigrette (3 TBSP extra virgin olive oil - 1 TBSP red wine vinegar - 1 clove minced garlic - dried oregano & basil - Dijon mustard, salt, pepper, lemon juice)
  • 3 tablespoons crumbled feta
  • Naan flatbreads
  • Kroger Mediterranean herb Hummus

***I made one change, I only pre-baked the piecrust for 15min instead of the recommended 30min in the recipe.  On the final bake, I did 22 min


Apple Pie

Except I use 3/4 cup of brown sugar instead of the white sugar

and 2 Tbsp of Thickener (EZ Gel) instead of flour

Bake at 425 for 1 hr

Kymberly and Leah's Couples Hawaiian night

 Directions for roasting a pig:

By a whole pig from Costco.  Thaw and cut down into skin layers and shove cloves of garlic in there.  We also injected a salt solution.  Brad built a refractory brick oven outside instead of digging the traditional roasting pit.  He babysat the heat all day long!  It was really fun!  We served the chicken with rice and extra teriyaki sauce from Mo' Bettah.  Kymberly also served melons and Hawaiian Sweet Rolls.  Leah brought bacon wrapped pineapple bites and Hawaiian bread pudding.

Antipasto-tortellini-skewers

Slow cooked Italian Meatballs

Brussel Sprouts

Chicken Parmesan

4-6 butterflied boneless skinless chicken breasts

4 Eggs
2 Tablespoons flour
Wisk together in a shallow bowl 

2 cups Flour
1 cup Shedded Parmesan cheese 
1/2 cup Shedded Romano cheese
1 Tbsp Oregano
1 Tbsp Basil
1/4 tsp Black Pepper
Mix together in separate shallow bowl.

Cut and dry chicken, salt chicken. Dip in egg and flour mixture. Cover well in flour and herb mixture. Deep fry in sunflower oil heated to 400 degrees F. Fry until golden. Remove from oil to paper towels and salt again to taste. 

Marinara Sauce

4 15oz Cans Tomato Sauce
4 15oz Cans Crushed Tomatoes
1  4oz Can of Tomato Paste
2 Finely Diced Onions
5 cloves Minced Garlic 
3 Tbsp of Olive Oil
3 Tbsp Oregano
3 Tbsp Basil
1 Tbsp Italian Seasoning
Salt and Pepper to taste

Caramelize diced onions in olive oil in a heavy sauce pan. Add salt and pepper. Add Tomato paste and garlic and lightly toast. Add sauce and crushed tomatoes. Add the rest of the seasonings and let simmer for about an hour until onions and sauce are reduced.

R&R Ribs-  Cook ribs at 275

2 hours meat side up

Add more seasoning and water (lightly for both)

Flip meat side down

Add more seasoning and water (almost pool the water)

Cook for one more hour

Check temperature to reach 195 internal

If not 195 check in 20 minute intervals

Nora’s Austin memories

  Make sure you shred the American cheese

  It just felt like it was so much sugar and maybe that's why they tasted so good but if I made them again, I'd cut the sugar to 1 cup, (1/2 cup on turn #3 and 1/2 cup on turn #4)  Also, I watched the video she had of making these, but when it came to the turns I just had to read the recipe for each step.  The video wasn't as concise. 

  I did one and a half times this recipe for the 10 of us and used 1 cup each of cotija, cheddar and, pepper jack cheese.

   Because they have so much fat in them (butter, cheddar, bacon) they just don't get high.  But it does make them soft and delicious when reheated.


Apple Pudding Cake
1 cube (stick) of butter
2 cups sugar
2 eggs
4 large unpeeled apples, grated
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1/2 - 1 cup chopped nuts (I like pecan or walnuts)

Cream butter and sugar.  Add eggs and apples.  Add dry ingredients and mix well.  Stir in nuts.  Bake in a 9 x 13 pan at 350 for 45 minutes.

Sauce

2 cubes butter, no substitutes
1 cup of evaporated milk
2 cups sugar
1 tsp vanilla

Cook over low heat for 15 minutes.  Serve warm over cake.
