New Blog!

This is a group of 13 friends and neighbors that get together once a month to enjoy good food and share recipes. Each month a different girl hosts and does all the cooking. Every few months we have a "couples night" which means we get to bring our husbands and two girls work together to host the increased crowd. By the years end, each of us has only had to cook one great meal and in exchange you get to enjoy 9 others!

Lindsay’s new & tried and true recipes

I just made up my own recipe for the filling, but used the rice/vinegar recipe from the link.  I put cream cheese, cucumber and avocado in the little cups then added sesame seeds and seaweed snack pieces that I cut into small pieces.  I drizzled yum-yum sauce and sriracha sauce over the top.  To form the cups, I balled a teaspoon or two size of rice into a mini muffin tin and then used the back of a teaspoon that I’d sprayed with cooking spray to get the shape.  The rice is kind pretty sticky, and sometimes a little hard to work with but overall it really wasn’t too bad!

Sarah's "last meals"

 

Fried Chicken

Ingredients

Chicken Thighs

Chicken Drumsticks

Flour

Salt 

Pepper

Vegetable Oil

Directions

1. Skin chicken drums and thighs. 

2. Place chicken in a brown paper bag with 1/4 cup of flour. Preheat skillet to 425 degrees.

3. In pre-heated skillet, place about 1/4 cup vegetable oil in pan. Place floured chicken in skillet. Salt and pepper.

4. Cook for 15 min or until brown uncovered. Flip chicken to the other side. Sprinkle salt and pepper. Cook for 15 min or until brown uncovered. 

5. Turn down skillet temp to 325-350 degrees. Flip chicken and cook for 15 min. Cover chicken with a lide slightly askew so the steam can escape. 

6. Flip chicken once more. Cook for 15 min with lid slightly askew.

Lemon Pasta

Ingredients: 

• 16 oz shellbow pasta or pasta shells

• 4 cups low sodium chicken broth or vegetable broth

• 4 cloves minced garlic

• 1 cup heavy cream

• 1/2 cup grated parmesan cheese

• 1/2 cup parmesan cheese shavings

• 1/2 cup chopped Italian parsely

• 3 cups fresh baby spinach

• 1 tsp salt (more or less to taste)

• 1 tsp fresh ground black pepper (more or less to taste)

• Lemon zest from 1 lemon

• juice of 1/2 lemon

Pour the pasta into a deep pot or dutch oven.

• Sprinkle in salt and chopped garlic, followed by broth. Heat up the pot on the stovetop and bring it up to a boil. Cover and cook the pasta for 10-12 minutes or until pasta is al-dente

• When cooked, squeeze in the juice from one lemon, zest and give it a quick mix.

Pour in heavy cream, spinach and chopped parsley. Give everything a mix and allow the spinach to wilt from the heat of the pasta.

• Sprinkle on shredded parmesan and mix it one more time.

• Serve with a lemon wedge, fresh parsley and a sprinkle of parm!

Kymberly's "Eat a Rainbow" night








The potato wedges use about 8 yellow or gold potatoes, washed and wedged. Par boil the wedges for 8 mins, then toss in the oil and spice mixture as listed in the picture above. Once coated lay them skin side down on a parchment covered baking sheet and give them a shake of salt. Bake at 425 degrees for about 45-55 mins. Make a dipping sauce out of mayonnaise, mustard, lemon juice, honey, garlic powder, salt and parsley. 


For the flank steak pinwheels you can either use a meat tenderizer and pound the raw steak flatter, or use a filet knife and cut it thinner so it will produce a nice pinwheel when rolled. Generously salt the steak, add minced or crushed fresh garlic, sprinkle it with shredded mozzarella cheese and shredded Parmesan. Drizzle it with olive oil, salt and pepper it and lay down a large bundle of spinach down. Starting at the short side tightly roll the steak tucking all the ingredients in. Tie it off with string to hold the shape and cut into slices. Cook on a hot pan or griddle coated with olive oil.
